Orange-Quinoa Muffins

Ingredients:
1 1/2 cups Quinoa flour1/2 cup soy flour1 tablespoon baking powder1/4 teaspoon salt1/4 teaspoon Orange Extract1 cup apple juice1/4 cup canola oil1/4 cup maple syrup

Serves: 8

Cooking Time: 30 minutes - one hour |

| Preheat oven to 375 degrees.
Mix all dry ingredients together.
In a separate bowl, mix all
liquid ingredients together.
Stir wet into dry until just mixed.
Pour into paper-lined muffin tins and bake for 15-20 minutes.
